Have you ever tasted fontina, the best known and most renowned Valle d’Aosta cheese? Some of you, surely. It can be found in all the best delicatessen shops, even outside the Aosta Valley. Not everyone, however, will have been able to taste the “mountain cheese” fontina, the one that farmers produce only in summer, in the high altitude pastures, where our cows spend the hottest season.
